Pancake Dippers

Don’t you mamas love Pinterest?  I love the inspiration you can get from all the photos and especially those recipes.  The problem is,  I bet most you have, is that I never go back and actually make them.  So lately, I’ve been cleaning up my boards and organizing them in a way that makes it look more appealing.  Doing that was also a great reminder of all my pins.   So much pinning, I forgot what I had.

So this past Sunday I tried Pancake Dippers.  There’s a little surprise in the…. BACON!!  I didn’t have a cute miniature mason jar to put the syrup in, so I drizzled it on top. Same difference.  Annnd note to self… next time I need to use the ketchup bottle to squeeze out the batter.  Since I didn’t have one, I scooped it out and put it in a large zip lock, but I cut the hole too big.  Wow, mess everywhere! lol

My Review:  The ketchup bottle would have been less messy and I think I’ll  use maple bacon for the next batch. YUM!

Husband’s Review:  “MORE BACON!” (next time I won’t cut them in half)


38 Weeks!

Alright party people!!  38 weeks!! Holy smokes, time is going by really slow at this point and I am feeling really miserable.  This is probably going to be my last post with Liam in my belly so wish me luck!!


How far along:  38 Weeks

Total weight gain/loss: Tooooo much!

Exercise: At this point….only prenatal yoga.  Don’t want to do much anymore.

Maternity clothes:  yep, that’s it.  Leggings are really comfortable for me.

Sleep:  Not good at all!  I am up between 3am-5am just waiting for the sun to come up.  Sometimes I fall back to sleep for a couple more hours, but it’s not comfortable.  I also get up about 3-5 times to pee.  This big baby is pushing on my bladder and it is not fun.  When I can’t fall back to sleep I watch the news and drink a cup of coffee.  Later, during the day , I take a 2 hour nap.

Best moment this week:  Our maternity photoshoot with an amazing photographer (pics coming soon!) The nursery is finally done and all of Liam’s clothes are washed!!!  Tim’s mom also surprised me with another baby shower with her close friends.  Visits to my chiropractor are always the best.

Tim’s best moment this week:  “Finally finished shooting Hell’s Kitchen.  Now I have some time off to help Corina with baby stuff- choosing a pediatrician, building furniture for the nursery, and  watching football!”  😉

Miss Anything:  My energy!  Can’t do much anymore.  and putting on my shoes without having to sit down.

Movement: Everyday!  I think he is really anxious to come out already.

Food cravings: Cold watermelon, burger and fries, chocolate, grapes, and peaches.

Anything making you queasy or sick:  This month has been MISERABLE!

Have you started to show yet:  HUGE!

Belly Button in or out? In 

Happy or Moody most of the time:  Annoyed- can’t breathe, can’t fit into any of my clothes, and swollen. 

Looking forward to: The Big Day!  Looks like Liam is coming sooner than later. At my last visit to the doc Liam was measuring 38 weeks when I was only 36 weeks.

Difficulties:  My hands/fingers hurt in the morning, Sleeping, breathing, walking for long periods of time, swollen feet-legs-arms-face.

Fact:  I am due at any moment so this may be my last post with Liam in my belly!

Food Diaries

I’m not going to lie, eating healthy has been a pain in the ass for me and I do have my moments where I get really frustrated or annoyed with vegetables. ” Sorry broccoli, I just don’t like you right now and your little friends either.”  If I’m going to look like Humpty Dumpty for 9 months I’m going to enjoy it…occasionally ;).

Sprinkles has been one of my FAVORITE places to buy cupcakes, but since they are located in Bum Fucked Egypt Beverly Hills, I decided to try a new place right around the corner. ” Velvet Cupcakes, I Love you.   You are just as delicious as those expensive Sprinkles cupcakes.”  I was even nice enough to buy Tim a Mocha Toffee Crunch.  Needless to say, I ended up eating almost half of his and of course, all of my Red Velvet.

I’m a huge fan of cheese and when I found out I couldn’t have soft cheeses during pregnancy I flipped!  What the hell?  I get really fat, but can’t eat what I really love!  Damn you soft cheese and your growing disease-causing organisms! I am always in the mood for something extra cheesy so I made macaroni cheddar cheese cups.  You can find the recipe here.  Let me know what you think.  I’m going to use more cheese next time…just saying.

Just another craving out of the thousand others I have….Wendy’s Frosty and Fries.  YUM!!

The BEST hamburger I have ever tasted in Los Angeles! The Truffle Burger at Umami.  and I won’t dare leave out the fries and the condiments that come with it.  Tim and I always order our fav 3…garlic aioli, jalapeno ranch, and Umami’s homemade ketchup.  God Bless!  I’m drooling just thinking about it.   If you think you’ve tried a better burger in LA, please share!

Lemon Cupcakes

When I first found out I was pregnant boy did the cravings kick in a little more.  Cupcakes were on my mind 24/7 and I had to make  a few (48 total) :/

Well, I don’t regret it! They were so delicious. I ate one morning, lunch, and two for dinner and I wasn’t alone.  Tim helped me gobble them up and even took some to work for his buddies.  Thank God! Because I was popping them in my mouth like popcorn.  Ughh, so hard to resist.

Thankfully I do crave some healthy foods like strawberries.  Tim’s mom, Sharon, took me to the Strawberry Farm in Ventura where we got to taste varieties of them.  I had no idea there were so many!  Half of them are in my freezer for smoothies and the rest are ready to eat.  I have them with fiber cereal and cottage cheese.

Breakfast Omelet Muffins

I wanted to try something different for our morning breakfast.  And since I am addicted to pinterest, I’ve been pinning lots of recipes to my Yummy In My Tummy board.  That’s where I got my lemon cupcakes recipe too.  So far so good! These egg muffins were so easy to make and you can add whatever you want.  Half were pork sausage and peppers and bacon cheddar cheese in  the rest.

 Our gummi bear is enjoying all this goodness in my belly!
